More Changes


So I have to use this space to let you know about the real things happening in my life too. Bloggers sometimes portray our lives in a way that seems like we are perfect. My life is not perfect. Jason and I are not together anymore. We tried to work things out between us, but we just couldn't. We are both moving forward with our lives and will try to stay friends, but for now at least, that's where my life is. I moved home with my mom about a month ago, and while its kind of fun being home and seeing people I grew up with, there are a lot of reasons why it bothers me too.

Part of me will always feel like I am so far behind in my life. This is not where I imagined my life would be at this point, but I am doing all I can to learn more about myself and to better myself given this circumstance.

So there you, that's just scratching the surface of my life issues right now. Of course being home brings up a lot of old issues, old eating/exercise habits. But a major motivation today was sitting on my doorstep when I woke up! I got my new Foodie PenPals package today! I can't wait to tell you all about it at the end of the month.

~Last Workout~

I saw this awesome leg circuit on Amanda's blog . I loved it! my legs were jello at the end of the workout. I love the intervals, and I love how the intervals get shorter throughout the workout!

I love Amanda's blog because it is a great combination of her fitness journey and real life posts. This week is her hubby's birthday and she has created a little 7 days of celebration for him. So sweet!

~Last Meal~

I made a Mexican Deep-Dish Pizza the other night and had the leftovers for lunch today. I will be sharing the recipe for this on Tuesday! It is delicious and very easy! Can't wait for you to see it!

~Last Snack~

Nutella To Go! I got one of these in my new Foodie Penpal package, and could only resist for about 4 seconds before I tore into it. Nutella, Justins, really any hazelnut butter is a serious weakness for me!
This little thing was delicious! If you get the opportunity, try it out, or make a version of your own! I would make it with apple slices.

I am currently indulging and watching TMZ. Yea, I know celebrity news is so sleazy, but sometimes, you just want to hear about how Lindsay Lohan screwed up her life even more. At least my life doesn't look so bad then, but then again, she still has millions of dollars, even if she can't use it until she gets out of jail!

Okay, are you ready for this blast from the past? Remember when Jennifer Love Hewitt had a music career? Yes! I listened to the song "How Do I Deal?" this morning. It was oddly cathartic given the current state of my life. If you don't remember the song, check it out. She really did have a good voice.

Okay, I have to admit, I grew up in the boonies. We are lucky to have internet, let alone cell service. I haven't taken many instagram photos because I have no cell service to post them! I really should have taken one or two of the flood down by my uncle's house the other nice! We were ready to start loading the ark! It was nuts!

I have been pinning a lot of fall fashion lately. I am obsessed with cozy layers, neutrals, and interesting jewelry lately. This is a really beautiful outfit that I want to recreate!

Today, I really wanted to do some strength training, but also keep the intensity up and burn some calories. This is what I came up with.

 
This was an awesome workout that hit all of my major muscle groups and left me a little jello-y! It took me just under 45 minutes to complete the whole thing and I was so sweaty by the end of the second circuit!

If you try it, make sure you use a weight that you are comfortable with, so that you can maintain good form when doing the reps more quickly during the second circuit. I switched to a lighter weight for the second circuit and a heavier one for the 1st and 3rd rounds.

I will get back to What I Ate Wednesday Next week. My camera charger is still at our old house and I have no way to charge my camera battery and therefore, to take pictures. So WIAW would be rather boring without pictures. Trust me, I am saving you from the boredom!

I do however, have an awesome and easy recipe for you soon and I can't wait to share it! Check back for it later in the week!

It's Tuesday again! I love sharing new recipes with you and I love to see your efforts at trying them even more. So, if you try one of my recipes please leave a comment and let me know how it turned out for you, and if you made any changes! I love hearing how you improved my recipes too!

I found this recipe over at about a month ago and have been waiting to share it with you for awhile now. These are out of this world delicious!

I the only change I made was to add a little shredded coconut, and boy was that an awesome idea! It made the cookies even more delicious!

Quick disclaimer, I borrowed the picture here from Chelsea, because my camera is broken and I can't get the pictures off of it!

Zucchini Cookies

Ingredients (24 cookies)
    For cookies
    • 1/4 cup (1/2 stick) butter, room temperature
    • 1/2 cup (4oz) unsweetened applesauce
    • 1/3 cup sugar
    • 1/3 cup brown sugar
    • 1 egg
    • 1/2 teaspoon vanilla
    • 1 cup finely grated zucchini (squeezed of excess moisture then measured)
    • 1 cup old fashioned oats
    • 1 cup whole wheat flour
    • 1 teaspoon cinnamon
    • 1 teaspoon nutmeg
    • 1/2 teaspoon baking soda
    • 1/2 teaspoon baking powder
    • 1/4 teaspoon salt
    • 1/2 cup of shredded coconut
    For the icing
    • 1 tablespoon butter, room temperature
    • 2oz cream cheese, room temperature
    • 1/4 cup powdered sugar
    • 1/4 teaspoon vanilla
    Instructions
    Cream butter, applesauce, and sugars in a large mixing bowl with hand mixer or Kitchen Aid Mixer.
    Add egg and vanilla then mix 2-3 minutes.
    In a separate bowl, whisk together all remaining dry ingredients except oats & coconut.
    Slowly add dry mixture to the mixer. I did this in three parts, mixing well between each addition.
    Add shredded zucchini and mix to combine.
    Add oats and mix to combine.
    Add coconut and mix to combine.
    Cover bowl with plastic wrap and refrigerate for one hour.
    Preheat oven to 350 degrees. Drop dough onto parchment paper lined baking sheets then bake for 10-12 minutes.
    Let sit on baking sheet for 2-3 minutes to set.
    Remove to a cooling rack to cool completely, about 30-45 minutes.
    While the cookies are cooling, combine ingredients for icing.
    Beat until light and fluffy, about 2 minutes.
    Scoop into a piping or Ziploc bag, snip off the corner, then pipe onto cooled cookies.

    Hi There! Hope you all had an awesome weekend!

    I am so sad to report that my camera is inoperable right now, so pictures are scarce! My charger is no where to be found, and the battery is dead! So sad!

    But, I had a really great weekend, so I hope just my recap will suffice for you.

    First of all, if you visit my actual blog page you will find that I have a brand new header! Holly, the blogger behind The Healthy Everythingtarian designed it for me, and I could not be more thrilled! She was a pleasure to work with and took all my ideas and made them into this gorgeous, simple header. I think its perfect. I also have brand new social media buttons to put up too, and I hope to get around to that today.

    So, back to my weekend. Saturday was so much fun. I spent to morning sitting on the porch reading, and the afternoon watching my cousin and my high school football team bury an opposing team. My cousin Johnny is a senior this year and one of the best linebackers on the team. I am so proud of him and glad that I am home for awhile and will get to see him play his senior season. He had 12 tackles in the game, and an awesome fumble recovery! They won 54-27!

    Sunday, my family had a little surprise baby shower for my cousin who is due in October. She lives in Albuquerque, and her friends were throwing her a shower on Sunday, we all got together at my Aunt's house and skyped her shower so that we could give her all our love from NY. She was so happy, and surprised. It was beautiful. We can't wait to meet the little munchkin!

    This week should be pretty mellow. Just will be doing some laundry and packing, getting ready for my little trip to Florida. I'll be visiting some friends there, and can't wait! It's been way to long since I've been on a vacation.

    This week I am finally getting back to my happy place. I still miss Jason like crazy, and it sucks being so far away from each other. But some great things have happened this week, and I am happy to share them with you. I love High Five Friday's and you should to.     I got to visit with one of my best friends. Seeing Whitney again was really great. I am so happy that she and her boyfriend Chris are doing so well. Chris is doing great with his music career and they are very happy together. (plus, they have an awesome apartment in Brooklyn now!)

    Seeing another friend that I missed! Becky and I lived in the same building when I lived in Manhattan. We used to walk our dogs together and hang out at the dog park. She is an awesome person and I am so glad I ran into her again when we went back to visit our old neighborhood.  I also got to see her dog Shayna, and her new puppy Gussie!

    I hit a weightloss milestone. Since I started trying to loose a little weight, it had been a really tough road. My body, as a result of my eating disorder past likes to hold on to the weight. But, finally, after months of trying. My body finally relented, and in a big way. I lost 15 lbs. Once it finally decided that I was not going to stop feeding it again, my body let go and I am so glad it did!

    I bought plane tickets! I am going to Florida in 10 days! I am super excited to be going on a little mini vacation to visit from friends. I haven't been to Florida in a few years, but I can't wait. I've always heard that its great to travel by yourself, and I will get to do some of that this trip too. My friend are working, and going to school while I will be there, so I will get some time to do museums and stuff by myself. Should be a good time. I can't wait.

    I paid my car registration. haha! This is a silly one, but I always forget to take care of things like that, so it good that I actually remembered and got it done before it ran out and would have cost me a lot more!

    Okay, so time for an explaination. I realize I just fell off the planet for the last 3 weeks or so. A lot of things happened, but the long and the short of it is this....I moved back home with my mother, Jason and Penny are with his parents and we are going to try to work on saving money and stuff for awhile.

    I have a new job starting up in a few weeks but some fun stuff to do between now and then. I spent last weekend visiting some friends in NYC. I missed them so much! And I had a blast with my friend Whitney, visiting our old neighborhood. We ate brunch at our favorite restaurant, walked around the park, near our old apartment, and had a great time. I really miss the days when I used to live with her...and just when I lived in Manhattan, in general.

    Next week I am going to take off again to Florida for the week. I am going to visit some good friends, my friend Kate, who was my college roommate and my friend Ista, who I know from an old job. We have know each other about 8 years and he is one of my closest friends, like the kind of friend that knows you better than you know yourself. I can't wait.

    So, now that you are kind of caught up with the changes happening in my life. Back to our regularly scheduled programming.

    Last Workout

    Jillian Michaels' Ripped in 30. I have been doing this workout since I abandoned Insanity. I will go back and try to do Insanity again, but I had to give my back muscle some time to get completely better. I love Ripped in 30 though, it gives me a great full body workout in a short time. I have also been going for walks with my mom each night. She is really trying to get in shape and I am happy to walk with her and encourage her.

    LA Complex! I had never watched this show before, but when I was in the city, Whit told me I really need watch it! So, at Whit's recommendation, I  hulu'd it. I watched the whole thing in about two days. It's kind of like a modern Melrose Place. I really like it, because there are so many different story lines, and the characters are not as flat as most shows these days. They are very complex. If you haven't seen it, check it out!

    So, I fail at life! I have been going through a lot personally for the last two weeks, and I completely forgot to post my foodie PenPal reveal. So sorry! Here goes!

    I was so excited to participate in my very first Foodie PenPals exchange. Thank you so much to Lindsay at the for organizing and setting up this super fun project. I don't know how she does it each month, but she is a superhero in my book.

    Each month Lindsay pairs up people from around the country to be penpals. We get an email where we find out our matches for the month, and then we are off and running. In order for everyone to meet and get to know as many people as possible, we send and receive boxes from different people each month. Instead of sending a box to the same person you receive a box from, you get a box from a different person. For more information on the Foodie PenPals Project, check out Lindsay's page.

    I met two amazing people this month! I sent out a box to Analisa, in Texas. It was filled with lots of great New York themed stuff, some of my favorites and some things she had mentioned as favorites of hers too. We even chatted a bit throughout the weeks about her desire to start her own blog. She even wrote a guest post for me!

    I received my box from Andrea. Andrea lives in Houston, Texas. I have always wanted to go to Houston! I have heard it has a great community of artists that I would love to explore. Andrea just started her own blog a few weeks back. Check her out at .


    Now, I have been feeling pretty crappy with this pulled muscle in my back, but seeing this on my doorstep this morning made my whole day! Andrea wrote a very sweet letter telling me all about the things she chose for the box. She wanted it to reflect Houston and I think she did a great job.


    Right after I took all these pictures I ran downstairs to try our one of the Prickly Pears! I had ever had one before. If you haven't you should really try it. They so good! They are sweet, but not too sweet, watery, and fleshy. Like a cross between a starfruit and a watermelon. Yum!


    She also sent a few Jalepenos! I love peppers but usually am not brave enough to try Jalepenos. I recently read an article that said the peppers hold all of their spicy flavor in the seeds and ribs, so if you cut those out you are left with a much less spicy pepper. I am definitely going to be adding this to our fajitas tonight!


    She also sent a bag of Texas grown Pecans, (and even included the correct pronunciation--ha!) I have always pee-can, but she corrected that! Apparently it is pronounced peh-cahn, at least in Texas! I think I am going to use some of these in my next batch of No-Bake Energy Balls. 


    Andrea also got some homemade honey from a friend of her grandparents who has a bee farm. If you remember from my post last week about the Susses County Fair, I scour the craft sections at fairs for honey sticks! So you can only imagine my joy at finding a whole jar of fresh honey in my box! Not only is it delicious, it still has part of a honey comb in it! I had some honey in my tea, but I really can't wait to spread that honey comb on some toast.


    She also sent a box of her favorite tea. I am a major tea lover, and this Detox tea is a new favorite! I added a little bit of the fresh honey she sent too! Pure Heaven!


    To round out her Houston themed box, Andrea also sent me a Houston publication, 002Houston. I can't wait to read it and find out what's hip in Houston! Check out that chair on the front cover. I want one!!


    I also found this adorable little reusable bag from the Houston Zoo, and a postcard depicting a scene from Pride, Prejudice, and Zombies, a book I have been meaning to read for awhile.


    So many thank-yous go out to Andrea! She did a great job picking out fun things for me! I hope you all had a great time exchanging Foodie PenPal boxes this month too! I can't wait for next month!
